Stuffed Peppers

It's a two-for day! I'm making up for lost time!!

Ingredients:

  • 4 bell peppers
  • 1 pound ground beef
  • 1/2 pound of ground pork
  • 1 small yellow onion
  • Kerry Gold garlic and herb butter
  • 4 garlic cloves
  • 4 pieces of bacon
  • Goat cheese crumbles

Directions:
  1. Pre-heat your oven to 350.
  2. Cut the tops off your bell peppers and hollow out the center (do not throw out your tops!). Set aside the peppers. If they don't sit flat on a baking pan, slice off a bit of the bottom so it'll sit flat. 
  3. Chop up your garlic cloves, onion, and a bit of the leftover pepper tops. 
  4. Saute the copped items in the butter. 
  5. Once aromatic, add in the beef, pork and bacon. Brown and break apart until fully cooked.
  6. When all ingredients are cooked, scoop the meat mixture into the peppers. Cook for about 20-25 minutes.
  7. Remove from oven when almost cooked, add a few crumbles of goat cheese on top, and pop back in the oven for another 5 minutes. 
  8. After the last 5 minutes, remove, and consume (or you can even cut in 1/2 and add a bit more cheese) :)





Spicy Chili Chuck Roast


Sorry it's been awhile, I've been busy and out of town a lot. But I've got some delicious, easy new receipes to try. Check out this spicy crockpot roast!

Ingredients:

  • 3 pound roast - we got ours here 
  • 1 cup red wine
  • 1 poblano pepper
  • 1 yellow onion
  • 1 green pepper
  • 1 can Rotel tomatoes and green chilies
  • 1 can Rotel hot with habaneros
  • 5 cloves garlic
  • oregano
  • salt and pepper
  • cayenne
Directions:
  1. Chop your poblano, garlic, onion and peppers
  2. Throw your meat in the bottom of your crockpot
  3. Layer on all your ingredients
  4. Cook on low for 8-10 hours
  5. Consume and serve with avocado

Happy Cinco de Mayo


Nothing ground breaking for Cinco de Mayo, but I'll share a quick, fun, easy treat to share with family and friends.

Ingredients:
- 1 tube of white icing
- 1 Bag of gumdrops
- 1 container of sprinkles
- 1 package of sugar cookies

Directions:
1. Bake your sugar cookies according to package instructions.
2. Let the cookies cool before decorating them.
3. Pipe your icing around the edge of the cookies and add a dot in the middle.
4. Put your lightest colored gumdrop in the middle of the cookie.
5. Cover the icing with sprinkles.
6. Show off your sombrero hat cookies!

Spicy Chicken and Veggies

Alright - so being honest - this weekend (past week), was not the best in terms of what I was eating. So come Monday morning, I was craving meat and veggies, particularly chicken. I decided the best defense to my craving was my handy crockpot packed with chicken breast and lots of veggies and spices! Enjoy the very haphazard recipe I threw together last night.

Ingredients:
- 2 pounds of chicken breasts
- 1 4oz can of diced green chilis
- 1 4oz can of tomato paste
- 1 14oz can of diced tomatoes with jalapenos
- 1 cup of red wine
- Handful of carrots
- Diced yellow onions
- Diced green peppers
- 1/2 cup of chicken broth
- Garlic Salt
- Ground Cumin
- Cayenne Pepper
- Ground Garlic

Directions: 
1. Put your chicken in the bottom of the crockpot.
2. Throw all your other ingredients on top
3. Simmer on low for 8-10 hours
4. Devour and enjoy the chicken and veggies (I sure did!)
